Vegan, Wheat free, Sugar free Granola Bar Recipe

Most of the commercial granola bars on the market a loaded with sugar and utilize less than healthy fats.  I was looking for a protein rich, grab 'n go snack that contained

* no refined sugar
* healthy fats
* organic nuts & seeds
* high fibre
* no wheat
and as an added bonus to my vegan friends,
* no animal products.

Whew!  Then last night, when I was in the mood, this recipe just kind of evolved.  Yogis know that you can't force something.  The energy will flow when the time is ripe.  But I will admit to many batches of other bars that were not talked about after.  Yogis discipline themselves to keep working, but remain detached from the outcome. 

That being said, these bars were such a success, I just have to share!

 
Choco-Banana Bars
 
Melt 1/4 cup coconut oil in microwave till softened.  Beat in 1/4 cup agave syrup, 1 tsp vanilla and 3 VERY ripe bananas till smooth.
 
In separate bowl, combine 1 cup barley flour (use any gluten free blend), 1/2 cup rye bran and 1 cup quick cook oats, with 1 tsp baking soda, 1 tsp baking powder, 1 tsp cinnamon and a pinch of salt. 
 
Add dry ingredients to wet, beating in non-dairy milk (I used coconut dream) to form  a muffin like dough (probably 1/2 cup in all).  Stir in cacao nibs and seeds (I used pumpkin).
 
Press batter into well greased 9" x 13" shallow pan.  Bake at 350 for about 20 minutes.  Cut into bars when cool.
